Dried Cherry Biscotti recipe

Ingredients:

2 ½ cups of flour.
1 cup of sugar.
½ teaspoon of baking soda.
½ teaspoon of baking powder.
½ teaspoon of salt.
3 medium eggs.
1 teaspoon of vanilla extract.
2/3 cups of dried cherries, chopped.
1 cup of ground almonds.

Preparation Instructions:

Blend together the flour, sugar, baking soda, baking powder and salt.

Add the eggs and vanilla, beating until a dough is formed.

Stir in the chopped dried cherries and ground almonds.

Turn the dough out onto a lightly floured surface and knead several times.

Using a greased cookie sheet as a surface, divide the dough in half and form into two flat logs about 9 inches long and 3 inches wide.

Bake at 350°F for 25 minutes or until lightly browned on top.

Allow to cool on the baking sheet, resting on a rack for 10 minutes.

Reduce oven temperature to 325°F.

On a cutting board, cut the logs on the diagonal into half-inch thick pieces.

Return to the oven for 5 minutes.

Turn over and bake for another 5 minutes.

Remove from cookie sheet and allow to cool on baking rack.
5. Store in airtight container.
